The Wusthof Classic Chefs knife is a professional quality knife availabe in a wide range of sizes.
If you were just to have one knife in the kitchen, it will be a chefs knife. This versatile knife is suitable for many preparation jobs for both meat and vegetables. Its blade is wide and its bolster deep allowing you to cut through even the densest vegetable while allowing your knuckles to clear the work surface. The knife is designed to balance beautifully in the hand whilst the edge is ground extra thin to give you the ultimate cutting performance. The tip will dice accurately, the main blade chops effortlessly, crush garlic with its broad side and take advantage of the shape of its belly giving you a smooth rolling action perfect for herbs. Wusthof Classic knives are fully forged from one piece of steel resulting in a superb combination of strength and balance. The handles are made from high density polypropylene and are secured with three rivets for maximum strength. The stainless steel used is a special alloy chosen by Wusthof for its properties of strength and hardness plus its stain and corrosion resistance. The full sized bolster adds a perfect weight and balance to all Wusthof Classic knives.
All Wusthof forged knives go through 40 manufacturing processes, the most critical of which are forging, tempering and sharpening. Forging is a process by which the metal of the knife is heated and then stamped in to shape. This changes the grain structure of the metal, adding strength to the blade. Once forged, the blade is tempered, this is a critical process which involves holding the blade at specific temperature for an exact length of time, before rapidly cooling. Tempering once again alters the structure of the steel, increasing toughness and hardness and relieving any stress remaining from the forging process. These processes result in a knife edge which is hard enough to maintain sharpness, yet has enough give to allow easy re-sharpening and minimal risk of chipping. Sharpening involves numerous stages, each progressively finer to produce an exceptionally sharp edge. The Wusthof knife factory was founded in Solingen, Germany in 1814 and after 200 years of research in to all parts of their knife manufacture, the results are clear to see. Most people, once they have tried a Wusthof won?t go back to anything else! All Wusthof knives carry a limited lifetime warranty.

The high carbon content of the steel (needed for hardness) means that the blades can be prone to small rust spots. To avoid this, always wash and dry your knife immediately after use, particularly if you have been cutting acidic items such as citrus fruit.
Wusthof knives may be put in the dishwasher, however it is not recommended, as it will lead to corrosion on handle rivets, and much greater risk of rust spots. If you do use a dishwasher, remove the knives the moment the cycle finishes.
Always store knives with the blade protected, either in a block, with a sleeve or on a magnetic rack. Sharpen your knives regularly to maintain a good edge. Either use an automatic (pull through) sharpener, a steel or a whetstone. Do remember that a steel or whetstone requires a degree of skill, and can cause more harm than good if used incorrectly. If you are unsure, practice first on an old cheap knife you are not so fond of.
