How To Choose A Pepper or Salt Mill

There are three commonly available mechanisms in modern mills, steel, plastic, and ceramic.

Steel
Traditionally mills have been fitted with steel mechanisms, these are generally fine with pepper, albeit prone to wearing out over time. Connoisseurs will also tell you that steel can slightly oxidise the food, leaving a metallic taste. The problem with steel mechanisms has always been salt mills. You cannot use stainless steel because it is too soft, and hard steels will rust, especially when in constant contact with salt and the inevitably moist atmosphere in a kitchen. If it’s just pepper you want, steel mechanisms are generally a cost effective solution, and will give several years of use before losing their effectiveness.

Plastic
With advances in technology, salt mills are generally now fitted with polycarbonate or polyacetal mechanisms to prevent corrosion. Plastic mechanisms are not hard enough to grind pepper, and even with just salt, the life of plastic mechanisms is limited, they will inevitably wear out after a year or two, leaving you with a frustrating, non effective mechanism. Plastic mills are gernerally good prices, but you have to accept their limitations, and expect to replace them from time to time.

Ceramic
Ceramic mechanisms are the way forward for mills. Ceramic is extremely hard, corrosion resistant, hygienic and non-porous. Ceramic mechanisms have none of the drawbacks associated with steel or plastic.
A number of manufacturers are now offering ceramic mechanisms in their mills. Based on the traditional shape and design of steel mechanisms, these offer a harder, sharper and more durable alternative.

SPICE MILLS

Cooking today is an adventure fueled by international influences, it has moved from the bland to the exotic and herbs and spices have become a key feature in the transformation of the traditional British fare.

T&G's Crushgrind® Spice Mills provide the perfect solution, their unique ability to grind WHOLE DRIED herbs and spices re-creates that 'garden fresh' taste and aroma. They are also both easier and faster to use than a traditional 'pestle and mortar'.

T&G's Spice Bottle mills are fully adjustable and have been designed specifically for food preparation. The clever grinding unit screws onto the spice jar and can be easily removed when the jar needs refilling or changing. On the all black model, the clip on lid also serves as a screw cap for the spice jar.

Grinding sea salt between using different spice fills will remove any taste residue. Alternatively the millstone can be easily removed by unscrewing the adjusting wheel at the base and cleaned.
